RECIPE OF THE WEEK! Salmon Quinoa Bowl Ingredients • 1/4 cup quinoa • 1/2 cup water • pinch of salt and pepper • Mixed Herb Greek Yogurt Dip to taste • 2 tablespoons diced tomato • 2 tablespoons diced avocado • 2 tablespoons leftover salmon • Sunflower sprouts or other micro green • Feta cheese Instructions 1. Put the quinoa and water in a saucepan and bring to a bowl. Cover and reduce heat to low. Cook for 10 to 15 minutes until the water is absorbed, the grain is soft, and you can see little green rings on the outside edge of the grain (they're germ rings). 2. Transfer quinoa to a bowl and put in the freezer to cool it down faster. I like the quinoa to be at room temperature so that it doesn’t steam the vegetables and make them soggy. 3. Once the quinoa is at room temperature add all the ingredients and mix together. The amounts are really just guides-add what tastes right to you. I stuck with roughly equal amounts of everything to make the bowl well balanced.

***Meet Max Fitness*** Meet Lauren. Her story is like so many, multiple pregnancies led to weight gain, and then raising her kids left her no time to take care of herself. She needed accountability, and support, not offered at the traditional "big box gym". She got lucky that her neighbor had recently found a small studio, Max Fitness, that was just what she needed. This is what Lauren has to say about Max: "I started working out at Max fitness in February of 2016 and have been a regular member ever since. They were exactly what I was looking for and needed in a gym. I was so over going to these large gyms where I didn't know the people that worked there, and there was no accountability whether I showed up or not. My weight has been a roller coaster for the last 10 years, with my highest weight being 367 pounds. I knew I could never let myself get back there. I was searching everywhere for a gym with accountability, a couple trainers I would see on a weekly basis who knew me and would text me to call me out for not showing up. But because I have 3 kids, 1 of them being under a year old at the time, I needed a gym like I explained, that also had daycare for at least my baby so I could workout when my kids were in school. Thankfully my neighbor Tacy had just joined a max challenge and explained how they had everything I was looking for! For almost 2 years now, I have been continually coming and falling in love with not only the staff, but all the women that I workout with as well. Not only do I now have awesome friendships with these ladies, but a lot of them have become my clients at work as well and I get to hang with them outside the studio as well. Thank you Max Fitness for helping me get healthy, ensure the scale continues to go down instead of allowing myself to ever get back to where I was, and for always being there for me" Of the people you know, who could use a change, a supportive community or a jump start towards their goals? Just PM me or tag them in the comments below and I’ll be so happy to send them a complimentary pass.
